About This Course
20% of adults in the UK suffer from at least one allergy. That’s roughly 2 million people who could be at risk from an allergic reaction. If you work in the production, cooking or serving of food, it is your responsibility to ensure that no allergens are found in the food given to an allergy sufferer. You never know when one of those 2 million may walk through your door, which is why it’s imperative that you have an awareness of allergens and know how to responsibly provide food for those with allergies, in order to avoid potentially life-threatening consequences. Allergen Awareness explores food preparation, production, handling and more to give you a comprehensive overview of allergen awareness and food safety.

Who is this course for?

Allergen Awareness is a food safety training course aimed at anyone working, or aspiring to work, in a catering setting. This includes people involved in the production, preparation, cooking, handling, transportation, serving or selling of food. As a food and drink provider, an understanding of food allergies and safety is crucial to keeping your customers’ lives out of potential danger.

What will you get from this course?

Upon course completion, you will understand the importance of recognising allergies in food and the affects that allergens can have on people who are allergic or intolerant to them. You will know how to safely handle, process and prepare food and drink in order to comply with health and safety legislations and avoid allergen-related sickness. As a result, you will be able to keep your customers safe and healthy.

When you have completed this course, you will be able to:
- Acknowledge the importance of allergen awareness and food safety
- Identify the 14 key food allergens, including shellfish, gluten, nuts, eggs and milk
- Understand the basic terms relating to allergens, e.g. ‘cross contamination’
- Recognise the labelling of allergens
- Avoid cross contamination
- React in an emergency and act if someone is having an adverse reaction

At the conclusion of each module there is a multiple choice question assessment. This will help you remember the main points of the lesson and act as a check that you have retained the essential knowledge and understanding of that particular section. The results can be seen instantaneously and you can correct wrong answers. When the result is satisfactory you can progress to the next module.
